20 degrees, smoker going with a nice brisket over mesquite and hickory, pot of cowboy beans simmering up, mom in law is making cornbread, still have to get the buns and cole slaw and potato salad made. Hard to cook and work at the same time!

Awww its probably for the best. You probably needed some machete practice anyway...

take the gizzard. cut it open, and rinse it out. take the heart and wash them both good.

Make sure you get the lungs... use your fingers to scrape in between the ribs, its the bright pink spongy stuff... rinse it out and stick in fridge for a few days...
