I really enjoy cooking, when I get the chance. I cannot bake. I have a problem with recipes. I do way better just winging it.

Exactly Eggsy! My kids are all gone too. Whew! Although my son did complain that I didn't leave him any eggs at camp last week, other than the newly laid ones, so Sunday I left him a dozen, he was happy to pick them up yesterday.
