This is a great way to use eggs! You just steam some medium grain white rice, and scramble some eggs (I use lots). Then, fry the rice in a large skillet or wok with garlic powder, pepper, mixed vegetable, and sesame seeds. Right at the end of frying, add soy sauce to taste, and salt if needed. Serve topped with green onions. Yummm!!!

My DD makes it all the time. She just sticks with onions in hers. I try to sneak in asparagus or peas once in awhile. Yes, it helps to use up those extra eggs.

This sounds really good. I will have to try it. It would be a great way to use up extra rice also.

The recipe I use calls for 1 cup of instant rice cooked, hot---
then add to cooked scrambled egg and veggie of sorts.

I've done it with the rice cold and with it hot and I've had good results both ways, so I don't think it really matters.

I always cool my rice-so the startch isn't release.....just takes a second in the freezer--whlie you are chopping the veggies!

Hi,

When do you add the eggs, before frying the rice or after? Thanks!

I add them for the last couple of minutes just to make sure they are warmed up, since I would have scrambled them earlier in the process.
