I've seen someone candle every day, so I would think every other day would be just fine. However, remember that each time you get them out, you have the potential to drop them (happened with a pair of this person's eggs, however she was able to patch them up, and she had almost 18 eggs). So it's your decision, really, and would not hurt the eggs, as long as you are careful. It was pretty neat the see the differences in the embryos day-by-day. Also, don't worry about the eggs cooling, as I know a chicken hen gets off the eggs for a little while every day, and I would think a duck hen does too.
