I packed the dehydrator with veggies today. Four pounds of mixed vegetables, two pounds of bell peppers and onions and a tray of red leaf lettuce we won’t finish in time. Still have some broccoli, spinach, mustard, kale and collards to put in when these are done. I make all of this into powders that I can add to pretty much anything. Burgers, meatloaf, spaghetti, boxed pasta and rice sides, etc. Nobody knows they’re in there and they get some extra nutrition from the foods they won’t eat.

That's a great way of using up those vegetables!
 
Finished grinding the tomato powder and have it sitting on the counter to condition; I got five 6 oz cans of paste into one half pint jar, such a big space saver. Slipped the skins from the fresh tomatoes, cut up the poblano and put it all in the freezer. I’ll pick up more tomatoes and another poblano next weekend to can some homemade Rotel. Ran out of foil so the ribs will go into the instant pot instead of the oven. I LOVE that thing, it has bailed me out several times. Making some BBQ sauce, but today me really appreciated past me when the rub I use was already made and in the pantry.
