I have a question. I've always wondered how having a block just 1 or 2 high would help as far as making it easier.

I get the high boxes that you can stand and work at...or the ones that are a little lower that you can sit on. But help me understand how the blocks help make them easier to tend.

And...those look great!!!!
I don't have to bend all the way to the ground to harvest beets, carrots or onions. I don't have to weed much since I put landscaping cloth under them. Tomatoes are almost at eye level, squash and melons grow along the side and spill over too. I can sit on the edges of the blocks and rest or weed or harvest. I frequently sit there and throw cherry tomatoes to the chickens. Just seems easier to me than scooting along on a seat and bending to the ground or trying to kneel which I used to do, but can't anymore. Whatever works, you know?

I have the same plan as you. We are building a block garden, with the blocks 2 high. I'm planning on doing all the plant maintenance sitting on the blocks. It's got to be easier on the knees that way.
 
Has anyone tried those little sour gherkins?
If you are referring to the Mexican Sour Gherkins, they appear to be the same thing a number of places were and are selling as Mouse Melon. They are a very fine vine and need something to climb. They aren't bad eaten whole and raw but I did not find anything special about either raw or pickled. In my case they took a long time to get the vines started and were an end of the season "fruit".
 
Has anyone run into this plant in your area? Idk what it is, growing wild here in VA. The leaves are green and waxy.
