i don't know the best container to store them, I once used
milk crates stacked on each other about four high.
the shoots from the bottom made it all the way to the top.
the best luck I had was when I built a wooden slatted box . I slanted
the bottom like a chicken feeder so we could take the potatoes from
the bottom.
once I buried carrots in boxes of sand in the basement.
the cat figured the sand was for her. rotted the whole box of carrots.
once we bought a 25 pound sack of carrots. put them into a refrigerator.
they kept very well.. I imagine potatoes would too.
I put my Spring carrots and turnips in the crisper drawer of my refrigerator. After a couple months they were a little rubbery but tasted fine.
 
I never made it,,,, but do remember my mom doing it. She made a large batch using a large stoneware pot. She them laid a board on top, with a stone as weight. Covered the top with a cloth.
I still have the pot and stone in my possession. Just for memories❤️

I guess placing into jars works just as well.
Do they need to be capped loose,,,,, to let the fermented gasses escape??

When we make "Hunters Stew" which is based on Sauerkraut, we use 50% sauerkraut, and 50% fresh cabbage. Just a personal preference.
Many peeps use sauerkraut only.

There is an Old School butcher shop in south central Wisconsin. (jvls1942, just a stones throw south of you. ) They sell Sauerkraut bulk out of a barrel. It is out of this world in flavor:drool:drool:drool,,,, compared to what I purchase in jars and cans at grocery store.
