This is the way of doing it when there isn't a "giant gene"
You would be selectively breeding for size which is how the larger breeds came to be.
If there was a giant gene all you would have to do is breed it into your line and then you wouldn't have to be selective in your breeding because they would all be giants because they carry the gene for it.

Selective breeding is sort of like a process of 'nurturing' the elusive Giant Gene..... like if you have a chicken with potential (for certain traits you are after), you will therefor give it all the nutrients, etc, necessary to ensure that it has the maximum chance to reach it's potential. That is all. The elusive Giant Gene already exist. Even if skipped a few generations, the gene is still present and even through breeding with normal sized chickens.... a few select offspring will inherit the Giant Gene and show.

All kidding aside I can speak more to dog breeding and genetics versus chicken. Heck I still couldn't tell you what my Bielefelder / Cuckoo Orpington cross will produce.

Anyway dogs are much easier since you have the ability to look generations back and see what the dog and bitch's side produce. Your desire to produce a giant will take some time and combination attempts. You will need to look at the parents and grandparents of the hen and the rooster. Do either of the parents consistently produce large "giant" offspring. Do you see any heath problems with the extra large offspring? How long does a Shamo take to reach full size? You will probably need to keep several over time just to see which combination is working. In dogs we see generation gaps as you spoke. If you like the son or daughter you might want to use their parents. The genetic diversity could be a challenge. If you have a large enough sample you could line breed to one side or the other

We see this in humans. I'm 6'-1" , my oldest son is 6'-4" and my middle son is 5'-9" (he has my personality). Will my oldest produce taller kids??

I'm still convinced there is a 'Giant Gene'..... and I shall be the one to discover it it!! My Shamo is growing quite well, we shall see if he's as big as his dad who stands at a monstrous 3 feet tall!!!! He's about 7 months old now, when he gets older I will be on the lookout for a hen worthy enough to breed with my Super Special Shamo! And then I shall selectively breed the best from the batch who shows potential. And then my breed shall be famous, oh yeah! Cyprus will be soo jelly of me, can't wait!!

My Super Special Shamo is growing along quite nicely....... yeah, we movin' on up, to the 3 feet height!! HATE ME!!

I will have to search for a big shamo hen worthy enough to breed with my Super Special Shamo though.... that might take awhile. Gotta do this project right.
