Fish Sauce:

In addition to being added to dishes during the cooking process, fish sauce is also used as a base for a dipping condiment, prepared in many different ways in each country, for fish, shrimp, pork, and chicken. In parts of southern China, it is used as an ingredient for soups and casseroles. Fish sauce, and its derivatives, impart an umami flavor to food due to their glutamate content.[1]
 
It took forever. I should've cut the meat smaller. The thai basil and mint just had very strong flavors, that's what the fam didn't like. DH has never liked mint, and the kids are always telling me that their toothpaste is too spicy, so I guess they don't really like it either.



We love our pho with a big dash of hoisin sauce and shriratcha.
I've never made beef, only chicken....I could eat that stuff every day!
My DH doesn't care for the "greens' either but I love em.

Ive never attempted the spring rolls before but looking at them they do seem pretty simple.
Did you have trouble rolling them up?


Yep. That's why they're so ugly. I was trying to roll per the instructions, but it wasn't working. Luckily that rice paper gets sticky after a minute. :lol:

I had hoisin sauce but didn't open it. I had "garlic chili sauce" with the sriracha chicken on it. The pho was alright, but I had overcooked the noodles and the beef was chewy. I didn't make the peanut sauce for the spring rolls, but I should've.

BIG shout out the maintenance men at Kings Daughters hospital. I took my son to ER with high fever and hallucinations and got a flat in the round-a-bout. I had NO help and they stepped up . Man named Mickey Many, many thank yous. You went above and beyond. God bless......

When I make pho I buy fresh noodles from the asian market...
the one time I bought the dry noodles and tried to cook them I screwed them up.
I think the secret it to cook them very quick and get them in cool water.

im not sure but i will never use the dry ones again)



You just drop the fresh noodles in hot water for a few seconds and take them right back out...i actually think you could skip that step and put them right into the bowl of soup.

I'm saving the broth for a future purpose, but the rest is going to the chickens. :lol: the thai basil and anise have a licorice flavor that's got my tongue feeling numb and tingly.
