I thought those black chickens have black everything.

Just like breeding anything to a specific standard, sometimes you get some that don't make the cut. About 30% hatch with color, and another 30% after that develop color in maturity. It's really difficult to get the all black. Lots of culls.

The black is very striking compared to regular colored chickens.
