depends on the size of the bird and how badly they were "shot up" the usual method is to breast them out and then take legs and thighs. Not much else actually has enough meat to "mess" with. Check out the Lady Amherst, too. I'd love to get a pen of males one day. For pheasants, you can either keep a pen of males or a few males with a lot of females if you want eggs to incubate and hatch out. Otherwise, they scream all the time if they are just a few females and a lot of males.
