sorry   Lois dropped off the hocks all smoked   some look good others not so much :/   

Is it possible that he was trying to smoke too many at one time?? Causing an uneven smoke.

none of the hocks were the same size   Which is my fault   but  hadn't planned on doing them until after most of the butchering equipment was clean and hauled back out to the shed.  

That stinks, but if you were loading the smoker you would have smoked liked size pieces.

I've made the very best red beans and rice of my entire life. DH was telling me how good it smelled when it was just holy trinity and smoked sausage.
