We use the turkey for broth for jook (rice porridge). You should look up "bone broth." It's becoming all the rage out here, darn it anyway, because bones are getting very expensive now. Anyway, bone broth is a slightly different process to make, and it will gel completely when cool. People with joint pain swear by it. My sis made some this weekend from beef bones and it is delicious. I need to make more and see if it helps my gimpy hip. You can save up bones from meals you've eaten, put them in the freezer until you've got enough for a big pot. The more cartilage the better.

do you "roast" the bones again before boiling them down ??
