I've made bone broth on accident. The jelly freaked me out, so I didn't use it.

I got my first egg today!
Bone broth cooks for over 12 hrs, super low heat, just supposed to bloop up the occasional bubble. Minerals and collagen are pulled out of the bones. I roasted the bones first to give it better flavor. Mostly beef knuckle bones and 2 turkey legs that were on sale. Veggies only go in for the final hour, since all the nutrients can be extracted in that time. It's very good for you, and MIL seems to have the least amount of pain drinking the broth, so we have to keep her well supplied. She's lost 25% of her body weight since Nov. I get jelly. I like beef neck bones but have to be very careful as they have some tiny sharp bones.

Well, I might have a bad attitude toward it if someone was throwing it at me!!It reminded me of the gross jelly that you scrape off a big deli turkey. When I worked in the camp kitchen in 04-06, the director at the time would scrape off handfuls of that stuff and lob it at folks.
BUT next time I have bones I'll try it again.
