I just looked up a recipe for beef bone broth. Its just my veggie soup except I dont throw the veggies away. That would just be wrong.
Bone broth cooks for over 12 hrs, super low heat, just supposed to bloop up the occasional bubble. Minerals and collagen are pulled out of the bones. I roasted the bones first to give it better flavor. Mostly beef knuckle bones and 2 turkey legs that were on sale. Veggies only go in for the final hour, since all the nutrients can be extracted in that time. It's very good for you, and MIL seems to have the least amount of pain drinking the broth, so we have to keep her well supplied. She's lost 25% of her body weight since Nov. Need to fatten her up!



I've made bone broth on accident. The jelly freaked me out, so I didn't use it.
Jelly is the sign that you did it perfectly! Too bad you tossed it. Makes a great base for all your stoups!

Jelly is where all the flavor is ! just wanna get rid of some of the fat.

Get rid of the fat in the broth? Yes, we always do that. Cool it down quick. We set it outside for a awhile, cools fast. Fat floats and it will congeal and harden on the top and you can lift it out and toss it. My sis leaves the fat on when she pours the broth into a jar or glass bowl so it can seal the broth. Kind of like using a layer of wax on preserves.

It reminded me of the gross jelly that you scrape off a big deli turkey. When I worked in the camp kitchen in 04-06, the director at the time would scrape off handfuls of that stuff and lob it at folks.

BUT next time I have bones I'll try it again.
