The birds we processed early this fall I made some super tasty bone broth using the necks. In fact I haven't opened 1 jar yet that wasn't congealed from the bone marrow. I expected it to thicken while cooking for hours, but it wasn't until it was processed & cooled. In fact the last kettle of chicken noodle soup I made was with my homemade broth. When I took it out of the fridge to reheat the next day it was like jello in a bowl.
