I made enchiladas out of a bunch of turkey meat once. Trick is finding an enchilada sauce you like. Making a enchilada sauce takes a lot of work. If you make an enchilada casserole even easier. Trader Joe’s has a good sauce.

for me boiling eggs is cooking Jane. hahaa

I boiled them last Tuesday before I went to Montgomery, dh was supposed to eat two every morning, he didn't so he is getting them now for bfast & lunch in our salads
