Granny's gone and done it again

Chobani Greek yogurt, a splash of milk and a cup of fruit of your choice.

Throw it in a blender, puree. Smoothie. If the fruit is too tart, I add a dollop of honey.

I need to learn how to make my own yogurt.
Is fairly easy. Heat milk to 180, cool to 110. Add yogurt starter, which can be some purchased plain yogurt, mix well. I put mine in half-pint jars, put lids on. Place jars in warm place for 4-6 hours, refrigerate over night without disturbing. Enjoy!

My warm place is a roasting pan containing a few inches warm water in oven with light on.

I make 15 jars, using 3 qt 2% organic milk and a packet of dry starter powder I get from Amazon, but you can Google how much milk to how much fresh yogurt. You can also use a slow cooker and do it all in one pot. Google is your friend! A candy thermometer is a good investment!
 
Lol, I do too. This morning I had dried fruit and raw cashews for breakfast. I LOOOOVE raw cashews! But at $11/lb, they don't happen very often! And the scrumptious dried pineapple, mango, and ginger were positively rolling in sugar. Still, a rare treat.
I need to dehydrate more fruit!
 
I use the yogurt in baking for things that call for sour cream or buttermilk. My DW and DD will add jelly(home made) or honey to it and eat it.


I also make a drinkable yogurt called piima. I have a small glass of it most mornings. It does not have sugar in it either!


I do try to be healthy sometimes!

I have a proofing box and make one 4qt jar at a time. I use a bit of yogurt from the last batch.

All but about a half a cup of 4 cups of milk is heated to about 150f. A teaspoon and a half of beef gelatin is sprinkled on top of the half a cup of milk to bloom. Add the milk with gelatin to the hot milk and stir to mix. When the milk reaches 180F, remove from heat and let cool to 108F-110F.

Then it goes into the proofer(warm place) at 120F for one hour and then 85F for about three hours. The yogurt will be slightly thickened and smell like yogurt!
