Granny's gone and done it again

talked with a butcher only 30 odd miles from the farm about processing Sunny. BUT since he is USDA I can't just bring him the carcass :( and I can't imagine all the adrenline surging thru her IF we could even get her into a trailer and then the trip.
Does adrenaline make the meat tough, or?

my brother bought 1/2 beef that had broken a leg and was processed ASAP both his wife and I could tell a difference and that was with out us knowing ahead of time. it just wasn't "right"
