How do you get yours all the same size and thickness?

cookie scoop and LOTS of practice. Cookie scoop is like a small version of an ice cream scoop with the sliding/sweeping bar inside to release "the hounds"

I usually end up with callouses from the whisk and cookie scoop by the time baking /candy season is done.
