I know that type one deals with low blood sugar and Type II is for high blood sugar. At least that is what I remember.

At least with breads the sugars are mostly avoided. Just a delayed spike with breads I love so much.

There's some starter being fed in the crock. Sourdough is a little lower in carbs from what I've heard. I want some sourdough with raisins and cinnamon.
