how would one collect the seed?

Save the seed out of a non hybrid melon. Wash and dry between two paper towels and vacuum seal in a bag. That's how I would do it.

If they come from a store they are likely to be a hybrid for disease resistance and higher productivity. There are a lot of non hybrid still grown too. If they tell you what they are you can google and find out if hybrid or not. Disease resistance is important and some of the best tasting small melons I've raise were hybrids.
