Granny's gone and done it again

I was going to use store bought breast since we dont have meat birds, and no farms nearby, but it makes me sick so I never got to
We don't plan on raising anymore meat birds. It's to hard on our old hands to process them now. It's better for us just to buy in bulk when on sale and put them in the freezer. We package breast with breast and dark meat with dark meat.

I bet, it looks like a lot of work.
I'm hoping to move to a place near a farm so I can get their meat, till then I'm kinda stuck about having chicken meat lol
 
I'm surrounded by big farms with broiler houses that grow out thousands of birds a year. We have a least 2 major companies that process the birds grown out here. I have a friend that grows pecans and citrus here that has broiler production houses. It's all here. There are the hatcheries for the chicks, fields of grains for the feed, and processing plants. The processors supply the chicks and feed and the farmers provide the land with buildings and labor. I know lots of people hate this but if chicken cost per pound like beef it would upset the masses too. I had a grandfather that had a state inspected processing farm that he and his sons worked. Don't know much about it but I do know my dad hated working in it and so did his brothers. I'm guessing they had to buy the birds from local farms to process and could do 50 a day. This was during WWII and he sold chicken to the local air base that trained pilots.
