Enchiladas are always a winner!

You'd be surprised. I have a kid that doesn't like food mixed together. Everything separate and plain. He was in his teens before he would eat sauce on his spaghetti. No gravy, no salad dressing. Casseroles are a huge challenge for him. Tonight was a milestone- enchilada sauce. Eaten but not necessarily enjoyed.
