pretty sure he is lying about the preserving . Maybe he is fluffing the eggs and only using one instead of 2 ?  I have never has alum that I know of but for some reason thats what it reminded me of.  

Servsafe does not allow four hours, pretty sure. I'd have to dig out my book to check. Eggs are super dangerous, especially for "at risk" populations like kids, elderly, folks with compromised immune systems, and pregnant women.
