Buy their homemade tortilla shells. The corn ones that are super thick. I fry them up then dry them on paper towels. Then let them sop up the enchilada sauce. Then fill with shredded meat and shredded cheese I use chicken. Roll them up and stuck in the pan when I have rolled up enough to fill the pan I pour the rest of the sauce over, top with more cheese and bake. You can also do it like a casserole. Just stack it all in different layers.
Oh my garsh that sounds good. I will!!!! I usually do a casserole. I put Mexican rice on the bottom and layer with corn tortillas meat and cheese until I reach the top with enchiladas sauce of course!!!
