do you have a commercial dish washer??? Load the racks up with taters and run them through that to clean them. and maybe par-boil them as well

I do but it's a chemical sanitizer. I don't mind the washing, it's the chopping that kills me. And the stirring, but I'll use the big floor mixer this time.
