haven't ordered yet but soon.   LOL then I can't change mind or the order. ;)     I am getting conflicting info on the yaks breeding and gestation cycles.   So 8 1/2 to 10 months before calves.  



pickled?  we eat it just so after pressure cookin  tell me more please?   we get pickled pigs feet and tripe but never picked that ourselves or tongue   kids wont eat the tongue but love the other innards, guess the fattyness gets to them, and seein it layin dont help lmao!

My grandmother used to pickle the tongue  I think you would do it the same way as pastrami or corned beef   only with some vinegar as well.   It has been about 30 or 40 years since I have had it pickled.   :drool      I need to contact my aunt and see if she knows how or has gma's recipe. 
I need to see if I can track down my grandmas recipe. My dad used to make it so my mom should still have the recipe. Pickle heart is yummy too.
 
PICKLED BEEF TONGUE AND HEART
Boil in salt water 3 hours. Peel hot tongue or trim heart.
Boil:


1 c. sugar
1 quart water


In a small bag:

1 tsp. mustard seed
2 tsp. mixed pickling spice
1 med. onion, sliced
Some pepper
1/4 c. salt


Simmer meat in solution for 10-15 minutes. Let set in cold solution in refrigerator about a week. Slice and eat. Store in solution in refrigerator.
