My husband and I have two Ameraucanas, two Jersey Giants, and one Welsummer. We handle them every day, multiple times a day, and the Americaunas and Welsummer all hunker down right away and sit in our hands uncovered. I have one little girl that will fall asleep in my hand everytime. The two Jersey Giants we handle just as much and they never sit down or seem to be calm when we hold them. Is this the personality of this breed or just these two ladies of mine? They're all about 4 1/2 weeks old.
 
Our Wellsummer wouldn't perch on our hands if her life depended on it! there is no rhyme or reason to how they turn out, on the other hand we have had some that were very skittish chicks that grew into very friendly hens. Keep handling them. Don't give up.
