I wasn't sure where to post this so I hope here is ok. Anyways, I have a question about making hard boiled eggs. I am getting my first chickens in 2 weeks. They will be chicks and I can't wait. I was telling a friend about it and they said that fresh eggs aren't very good for making hard boiled eggs. They said that I would have to keep those eggs for 2 months until they would make good hard boiled eggs. Is this true? I am sure the eggs I buy at the store are over a month old or at least I am guessing that old.

Fresh eggs are hard to peel,..there are tricks to make it easier. One is to use your older eggs,..not months old,..maybe a week or so. Then my DH swears by this,..boil your eggs then put them in the frig overnight. Peel as usual the next day. I didn't believe him so I tryed it on some just layed eggs,...they pealed very easy and didn't tear up! I guess chilling them overnight does something for them.

Wow I had a problem with our own chicken eggs as well. One time I made some deviled eggs with store-bought eggs, they peeled perfectly (except for 1 or 2) but when I tried to do the same with our own chicken eggs, the outside part of the whites would just peel off. The next time I boil some, I will try putting them in the fridge like Up-the-creek recommended to see if it works.

I have been boiling them 14 min then cooling them in ice water (like on the thread on boiling eggs on here). I had some fresh from that day and some a few days older. I had trouble with the fresh from that day but the older ones (even a few days) have worked fine.

take something sharp, i use an old ice pick and stick a small hole thru shell( in large end) into egg and boil, you can do this with just gathered fresh eggs and they will peel, after they are boiled, put in some ice water for about 10 minutes and peel under cool running water. hole does not break egg , just allows some air to make peeling easy. i also start peeling on the large end of the eggs.

Boil water then lower fresh eggs in the boiling water with a slotted spoon for 14 min. After 14 min put in an ice bath until they are ice cold. Even fresh laid eggs will peel with ease. GUARANTEED!

I salt the boiling water, but otherwise that is exactly the same thing I do and it works great. No problems at all. I was amazed how easy they peeled.

That's the method I use and same day laid eggs did not peel nice.

jojo54 did you use ice water.Simply running under cold tap water will not allow the egg to shrink enough inside the shell? I have used this method many times on day old eggs and have excellent results. They all peel with ease.

I just had this conversation last sat. in the feed store., This gent said to leave them out on the counter for about 4or5 days the air separates the thin film from the shell and they will peel easily. I haven't tried it yet but plan to this week end.
