My friends came and took the remaining 10 chickens yesterday.This time she measured the temp of her scalding water..145 she said..She said it was the difference between night and day from the first batch..the feathers came of so easy and all the pin feathers came out, and no ripping of the skin! I will be curious to see if the skin is less rubbery then last... Also we will be resting them for 3 days in a big bag in the fridge..
freedom rangers all doing well on their 2nd day here..no pasty butts!

processing is definitely one of those things that seems to go exponentially smoother with each experience. i can't wait for you to try one of these newly processed birds! i'm hoping the difference is night and day there, as well!
