Has anyone ever tried storing eggs at room temperature?

Hello everyone, we moved to Zambia September 2007. One of the first things we noticed is that eggs are never refrigerated here. We are a family of 8 so purchase several dozen at a time. We have never had a spoiled egg.

That said, we bought layers of our very own in two months ago and let them free range in our rather large yard. The eggs are incredible. Soooo we bought 8 more layers which arrived two days ago. Even in Zambia, home grown eggs are not even comparable to those sold in stores and markets.

We are enjoying our hens very much. I have learned so much from the forums here. What a blessing!

I believe if the eggs are clean and not washed, the natural "bloom" on them will keep them fresh for a long time. One of the best books for tips from days past is "Farmers& Housekeepers Cyclopedia 1888, A Complete Reference Library". It's probably out of print-last printing 1978, but what a cool book! It has a whole section on preserving eggs.

I only refrigerate washed eggs. The others sit on my counter for days, sometimes weeks, and are fine.

We are from Redmond, Oregon. We moved here at the invitation of the Zambian Foursquare Church leadership and serve as missionaries.

My husband and I raised our first two children into adulthood and then adopted five more, four of whom began their lives in Sierra Leone. We thoroughly enjoy parenting which is a good thing since we have been doing so for thirty-one years!

Wow Beckie, An exciting time for you and your family! I moved the other direction - from Africa to USA so I understand the cultural differences and how difficult that can be.

Edit to add: I keep my eggs on the counter in the kitchen - they're good for at least a month

When growing up, my parents property was attached to my great-grandparents farm. They raised 1000's of Leghorns and sold eggs. The eggs were never brought in the house.

If need be, they would be sandpapered but usually just stacked in large square eggs flats on the back porch.
