I know people, including DH, think I'm a little too gaga about the whole bresse thing but as a chef I've been wanting to cook one, let alone eat one for AGES which short of going to Europe was basically impossible until they were imported. Even when we lived in England you still had to go to France to get one and they were EXPENSIVE! So to have chicks and juveniles on the way makes me giddy beyond belief. Some people believe that they won't be the same because of terroir etc but I'm going to do my darnedest to replicate the style in which they're raised for sure! If any of y'all get a chance to head over to oregon give me a holler and we'll roast up some beautiful chickens!
