I find that scary!


It typically is, especially for people starting out, because the FDA is very "loud" about it. We grew up this way though, I learned from my mom and we've never had a problem. I've never lost a jar and we've never been sick from it.
I grew up canning, too, and I still find it scary. It can go right for a long time...but it only takes one wrong time to kill people.
 
I waterbath can everything. Even all the taboo stuff, like oil, meats and green beans. It works just fine for us.


I've seen some pretty scary things develop that way. Remember the old jars with the rubber seals? My aunt thought she could can fish with them. Not very safe. I tend to lean more towards safety. I know others who don't, but I couldn't risk it. I think we have only ever had one jar unseal itself.

I have a pressure canner, or whatever it is called. I bought it last year, used it twice. I normally only can jellys and use my water bath one. I have no idea what it would take to ship it, it is not light. PM me if your interested.

Hang in there! I still find it hard, days where I think, heck, I wanna smoke... I just manage to get through the thought and then its ok again! Being free of them feels way better than the ten minutes of relief smoking one would give me.

Being able to walk quickly up from the barn without huffing and puffing was a plus. I think the toughest thing is when I have coffee in the morning.
 
Okay, I'm exhausted, and feel the need to babble. Hubby lit the bonfire pit to burn deadfall at 6:00 am. He couldn't keep it burning, so gave up. No big deal; the pile wasn't that big. It could wait. We both have been doing chores and errands all day. Then he took a nap. At about 1:30, he woke up, glanced out the window and hit the door running. A wind had come up, and apparently there were some coals down in there. He started hauling buckets. I got the muck tub cart, and garden cart and started filling tubs to haul. Reilly has eaten all the hoses we had, but none would have reached anyway.

Fire moved fast. When he saw it, it was less than a couple yards from the fire pit. By the time I got out there with the first tub, it was over maybe a quarter acre and moving. I hauled out the next tub, grabbed all the dogs, and called 911. They got to us quickly, but it was maybe an acre and a half by then, next to the shop, heading for the new chickenhouse and his Harley trailer. Fast. Fire Dept got it out quick, thank goodness.

I have used my energy allotment for today. Hubby certainly has, as he was running buckets while I was moving tubs. He also inhaled a lot of smoke. I have him with a humidifier and hot tea for the steam. He's not in bad shape, but it's miserable to have lovely seared lungs.

Nobody was hurt, human pet or livestock. The fire didn't get to the front yard where all the dried leaves are. It got stopped before it reached any building....well, it was licking the shop, but that's all it got. A pile of lumber to build a lean to on the shop got no more than singed. Some fence will end up having to be replaced.

My husband points out that the dang deadwood in the fire pit still didn't burn!

Yes that was too much excitement for one day... the week too. Glad all is good. I know that had to be scary. You still going to burn that deadwood?

Hollowoak....wow, glad you caught it before it did any real damage...that's so scary!!!!


X2. That sounds like some heart pounding minutes. I'm so lad no one got seriously injured. You guys had someone looking out for you. If your hubby had woken 5 minutes later what a catastrophe that would have been.
