Have a good banana bread recipe?

To the chickenchick... I made your recipe yesterday and it's delicious!

I plan to try some of these other recipes too! Thanks all for the posts!!

1 C. Butter
2 C. Brown sugar
4 lg Eggs
2 Tbls vanilla ext.
8 banana's mashed
4 C. flour
2 Tbls baking powder
1 tsp. salt
1 C. oats
1 C. chopped walnuts
Honey

Preheat oven to 350°

Cream butter and sugar. Add eggs one at a time. Mix in vanilla and banana.

In separate bowl combine Flour, Baking powder, Salt. Then mix in oats.

Mix flour into banana mixture. Stir in walnuts. Makes 2 loaves

Bake 1 hour. Remove from pan and cover with honey. (I like to use my hands and just rub it all over!!! top sides and bottoms. Then I will let it absorb and do another coat!) I have also made this in muffin tins!

The oats kind of just disolve right in and make it a little more filling! I've looked for them when eating and could only see the center part! cant taste em either!

Skip the fake junk. Its bad for your heart anyways.
Here is my recipe, made in the traditional method of soaking the grains to reduce phytic acid.
This loaf will melt in your mouth.
And, for those of you that need a gluten free version, all you have to do, is use brown rice flour in place of the wheat.
I promise it turns out the same. No extras needed.



Banana Bread

1/2 cup butter
1/2 to 3/4 cup of honey
3 bananas
2 eggs
2 cups of whole wheat flour
1 tsp of baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1/2 cup of milk
1/2 cup of soaked/dehydrated nuts (optional)

Soak the flour and milk together for 12 hours.
Mix in the rest of the ingredients, pour into a pan, and bake at 350* till done.
 
You could always fake a banana cake for banana bread. You can always do the 3-2-1 recipe as well...

White/Yellow cake mix, add 3 ripe bananas..... follow the remaining directions.

3-2-1 cookies.

1/3 cup oil
2 eggs
1 cakemix (I love the chocolate here)


Bake like you do cookies.

Anyway you could use banana in this recipe as well. Use one banana and then use about 1/4 cup oil. Add more oil if it seems overly dry. Ummmm banana cookies with chocolate chips. Now we're talking. Oh and you could use white or yellow cake mix here.

I find that the Vanilla Bean Cake mix from Trader Joe's is very much like a dreamy banana bread when you add 2 bananas and follow the rest of the directions. Works with pumpkin too. Yum! Enjoy.
 
Here is my grandma's recipe...it's very moist, too!

1 cup sugar
1/2 cup butter
2 eggs, well beaten
3 (or more) ripe bananas
2 cups flour
1 tsp salt
1 tsp baking soda
1 tsp vanilla
2 tbs water

Pre-heat oven to 350 degrees.

Cream sugar & butter. Stir in beaten eggs & mashed bananas. Slowly add dry ingredients as you stir to combine. Add vanilla and water.

Pour into loaf pan or glass pan.

Bake at 350 for 45 minutes or until toothpick inserted in center comes out clean.
 
I have a banana bread recipe with no butter in it that turns out very moist and sticky!!!

also has to be one of THE easiest recipes... I like easy.. so I thought I'd share

- 2 ripe bananas
- 2 tbs Golden Syrup

- 1 egg
- 3/4 cup brown sugar
- 1 cup of self raising flour
- Pinch salt

- Mash bananas and then add golden syrup & stir through
- Next stir in the brown sugar and add the egg.. stir well
- Sift in flour and the pinch of salt
- Mix well until combined

Chuck it in a loaf tin... it looks very runny... but don't be concerned!!!!

Bake at 356F for approx 30 minutes (in my oven it takes 40)

Someone I know sent me this from Menufortheweek.com It sounds totally weird, the vinegar in it, but this makes an awesome banana bread:

1/3 c veg oil 1/2 cup milk
1/2 cup brown sugar 1/2 tblsp vinegar
1/2 cup sugar 1/2 tsp baking powder
2 eggs 1/2 tsp baking soda
2 bananas - mashed dash salt
1/2 tsp vanilla 1 1/2 cups flour


Preheat Oven to 350

In a small bowl, mix milk and vinegar. Let sit to curdle milk

In a large bowl, mix first 6 ingredients. In a separate bowl, sift together baking soda, baking powder, salt and flour.

Mix ingredients from all three bowls. Stir well. Pour into prepared loaf pan(s).

Bake in preheated oven for one hour.
