The feed store grump is just denying it because he does not want to give you a refund, that is 100% a rooster. Maybe he has the blue egg gene? Then you could breed him and hatch out some chicks that would grow up to lay blue and green eggs, depending on what you breed him with. I also have an EE rooster, I breed him to some white leghorns, Black australorps, sexlinks, RIRs, and a Brown Leghorn, the results have just hatched
