Even as a newbie I have found that sexing the birds isn't all that difficult. Why would someone sell you all males unless they were either clueless on how to sex them or just wanted to get rid of some of the males?
If you are not familiar already, just hold the bird upside down and expose the vent. Roos have a little "knob" just above the vent. If you push on that gently or gently squeeze it, foam will appear. They need to be 3 or 4 weeks old to produce the foam though.

Hens have a slightly larger vent without that little "knob".
 
Welcome to BYC Matzo, so glad you joined the flock. Our moderator Two Crows also has quail.
Quail rock. They started laying eggs for me by 7 weeks old and now I am getting 9 a day. They might be small but they sure add up fast. And the birds are a treat. I've been taming them so they are enjoyable. They "can" be skitzoids and jump around like popcorn if they get spooked so taming them is the only option I could think of.
