I wanted to leave an update here on her condition if anyone was curious and if anything here could help someone in the future. Long story short, she healed up very well! She is basically back to her active self: making noises, a lot of walking around, jumping up and down stairs and beds, laying eggs. I took her outside a few times to walk around in the grass a bit and she was bold enough to try and fight her older kids.

I sanitized the wound the first few days with Hibiclens as instructed and applied Neosporin pain relief ointment. I stopped this when my mom applied a Chinese medicinal powder that helps to heal cuts quickly.

The healing process first started off with scabs from her back. And her feathers started to grow back.

As for the wound on her neck, it healed up much better than I could ever imagine. I was worried about what I should do if her organs were exposed or hanging out, but it is slowly going through this healing process of scabbing and being pecked off and re-scabbing again. New meat/skin basically glossed over and it doesn't appear that any organs are exposed/hanging out. I use Neosporin antiseptic foam for kids whenever the wound looked fresh after the scab falling off and waited for the foam to dissipate and I repeat this process once in a while whenever I reexamine her wound. (I don't have a more recent picture. This picture was taken on Sept 4th)

Thank you for the very detailed update, and glad to hear that she is well. Feathers sometimes will not grow back until the next molt, but that varies. Good luck with her, and great job.
