Help!! I'm overloaded with eggs!!

For anybody who can't wait, it's Alton Brown's cheese souffle recipe from his "Good Eats" show...the only change is that I stir in a pound of frozen chopped spinach (thawed, with all the water wrung out) just before folding in the beaten egg whites.

It's worth watching the show, as there is some technique involved that is easier to visualize.

I have been selling eggs for over a year now. I have no trouble getting rid of about 10 dozen a week, I deliver and some customers come to the house. This past month the hens paid for their bedding, flock blocks, and ground food as well as pellets. I have 14 young layers who usually have about 11 eggs on average each day. The old mixed flock from last year are struggling to lay, today they didn't, the most of them are molting. It has taken a year to get up to being able to get customers on a regular schedule, keep a list of possible customers and call back and check to see if they need more. I have refused to put a sign out in my yard as others have expressed the dangers of doing so, nor do I use CL. Word of mouth, and when I really get back logged the local tractor supply store suggested putting up an ad on their bulliten board.

I have 6 year old hens I bought becasue they were laying.. got them home.. not a darn egg from any of them and its been 2 months.. of couse ow is the molt and short days.. I sure hope they start back up I have lots of people I could sell a doz for $2,00, if I had eggs..

ya know party season is coming up and everyone loves deviled eggs. great dish to take to parties and such..

If you're really running out of room, and not raising layers JUST for selling, you may consider giving some away. It'll bring people in, they'll spread the word, and then you'll have people who want to buy some!
