Help me find my future dog breed?

Very short faces are bad for dogs, and people think they are cute. Very sad.
And dogs are individuals, so breed preferences are guidelines, not carved in stone.

I’m aware that individual dogs have different personalities, and that any puppy I get will be a bit of a gamble, behavioral-wise.
 
I would recommend a German Shepard or GSD to be the easiest to keep groomed with a slicker.
They are tied to the masters and easy to train.
I’m a bit wary of German shepherds because all that I come across in my neighborhood are borderline neurotic. That may be a result of the owner though.

GSDs are a lot of dog, they require a lot of training imo, but they can be, as Said, easy to train. They can become aggressive and reactive if not properly handled

And/or poor breeding. A well bred, well trained, and WELL EXERCISED German Shepherd should not be neurotic.

True. They are a lot. But great dogs in the right hands.

Yes, this. They are great dogs when properly trained and bred.

My neighbor has like 3 or 4, they are....neither

In my animal science class, my teacher brought her German shepherds. Those were probably the best trained Germans I’ve been around, super calm and well adjusted. The issue that popped up and she wasn’t allowed to bring them anymore is that they were growling at the other service dogs in training. (Which were labs, I believe).
