Help me please ..calling all bakers

I have a bread maker that i sue quite regularly, it has the function to make the dough only, so when i want fresh rolls for dinner i will make the recipe for white bread and form it into rolls and bake.

the problem is the crust is really hard, really crusty buns. Thats fine sometimes but other times I want a softer more "chewy" crust.

how can I do this?

I have never made bread by hand, would not even know how to start
i dont have regular yeast on hand, just the quick rise stuff for bread makers
I dont use the pre-made bread mixes for bread makers, i use whole wheat flour and add everything else...
 
Back in the day when I baked bread. I would brush the crust with butter when it first came out of the oven. It made the crust soft.

What Imp said! And check around online, there are zillions of recipes. I gave away my breadmaker- sure wish I had kept it!
