help on Eggs please!!?

I bought 2 gorgeous wood planters on clearance for $3 at the tractor supply company. If I didn't find those I was just going to use one of my daughters old lego buckets!

Why must you let the eggs cool on the counter before putting them in the frig? I'm new to egg laying too...and always looking for good advice. We are getting 9 a day now!!

You don't have to refrigerate eggs at all, if your house isn't overly warm. In England and Germany, they sell eggs on the shelf next to the bread. I like to refrigerate my eggs, but I had a friend who always kept hers on the kitchen counter, and she gave me quite a few - I never got a rotten egg from her.

You can wash eggs with a mild soap, but it washes the "bloom" off of it. The bloom is a naturally occurring protective coating that is on the eggs when laid, and with it on no air can get into the tiny little pores on the egg. They will stay fresh much longer than washed eggs. I don't wash my eggs unless there's poo or something nasty on them.

It's better to scrub dry eggs to get stuff off than wash them with water. This is a good page on washing eggs: http://www.plamondon.com/faq_eggwashing.html

Eggs
can keep a heck of alot longer than 6 weeks in the fridge. Experiments have resulted in eggs still being good after 6months. Maybe not great for eating plain but still not rotten and more than ok for cooking with. They also showed there isn't really a better way to store an egg than just keeping it cool.

You don't have to leave them on the counter first. We do sometimes leave them on the counter, but not always. I gather a day's collection in a basket or bowl. They stay on the counter or go into the refrigerator. I keep an egg journal for each of our hens. At the end of the day, I add the eggs to the daily journal before putting them in a carton and refrigerating them.

How do you know who laid what? I have 23 hens, and have no idea who laid what egg, unless I happen to catch them in the act.

We collect the eggs when the kids remember (or are reminded) and sometimes go a day or two before that happens! They pu tthem straight in the fridge and I wash them, if needed, before using them. If you have a clean nest box (which you will, unless they sleep in it which you can train them out of by moving them after bedtime to their roost a few nights in a row or until they get the idea) your eggs will be clean. I think mine are only dirty at all because the kids hands are not always the cleanest. At most, there is a smudge of dirt or a bit of poo. If they are really poopy (rare) or cracked where the membrane is broken I feed them to the dogs. There is nothing wrong with them, just kind of gross and I have a lot of eggs so can spare those few.

An old Leggo bucket would be a great idea! One of the flat ones that is shaped like a big shoe box...

At 15 my youngest was 6'2" and had a size 16 foot. He's now at 23 6'5", so I guess he did grow into his feet!

We've got to get nest boxes going out there. I was going to use kitty litter buckets, cut down, but they're not as big as I thought, so hubby is going to build a four-box set to hang on the wall.
