She could be broken in that amount of time, sure. I have broken a broody in 24 hours. She got the message very quickly. Maybe it's the anger that breaks them. hehe
As to your angry/flighty hen, i couldn't offer much help. They go through different stages of growth, etc. Also, she could be working up to a brood. They often get funny during that period too.
