Dinner will be whatever both looks good and is on special - either a small prime rib or a small semi-boneless leg of lamb I hope.

The boys barely touched the ham that I cooked for them to eat while we were away so I'm going to use that. 3 out of 4 of us have persistent chest colds so I'm not putting effort into the holiday.

I wish they wouldn't put the neck inside of the bird. For my money they can keep it and the liver and heart. I don't have a dog anymore

I boil the neck and giblets to make the broth for the stuffing.

The chickens like the neck, heart, and liver.

My birds are happy to eat any sort of meat scrap I ever give them. :D

I'm all for that, and I did that myself, *but* I made the brooder/hospital/jail a separate, moveable, smaller tractor (5' x 5' "downstairs"/ground level and about half that "upstairs") and that has worked out just right for a hen with a half-dozen chicks or a single injured hen. It's good to have the option of putting this in a diferent location away from the main flock.

I don't like the flavor of the heart. I am not too fond of liver either. Annie boiled it all up for the gravy , I think.
I cooked like Kitchen Impossible this morning. I finished carving the bird at 11.59AM , so of course nobody shows up at noon like I told them. DD's can eat it cold. I am not keeping anything warm. I am a bit ticked off. sorry.
anyway, Happy Easter to you all.

Well, speaking only for myself, I LOVE THIS. Refreshingly honest words.

Joyous Easter.

Full and fast recovery to your family.

Yes, makes good gravy. My birds, same - though they tend to toy with the innards more than actually eat them. Even so, its enrichment.

I wouldn't be happy either, unless they were at church....or a really good excuse

Normally it wouldn't make any difference when we ate. but DD2 had to go to work at 3PM. So I got up at 5AM to get things going to get it ready at noon for her.
Well, that is all behind us now. The whole meal was delicious. The best turkey I ever made. First time I ever brined one. It is the only way to go.
I can't feed the neck to the birds.
We got rid of all birds and animals two years ago. Then the dog had to be put down. All we have left are the wild cotton tails, deer and turkeys.

I saw the doctor. The good news is that it's not pneumonia.

The bad news is that I'm out of work for a week and on a bunch of meds.

The other good news is that the Easter Egg chicks that I hatched for the hatch-along (half of whom are Easter Eggers), seem to be happy in their brooder with dual heat sources for the ridiculous cold snap we're having for the next couple days.

Sorry to hear its so severe. Hopes your recovery surpasses all expectations.
