Hen Having Seizures, Please help

Everything you said about what happens to your chicken,seems like a stroke. Since I am from Croatia, where summers are quite hot, strokes often happen due to the heat. Unfortunately, we remove such chickens from the flock.
 
Save a Chick probably has everything in it she needs, but read the ingredients to be sure it contains sugar. It won't hurt to add a bit more sugar if you wish. It's the glucose that directly feeds the brain and it could calm the seizures.
Dextrose it the 3rd ingredient in Sav-a-Chick electrolytes/vitamins.

Can mix up a smaller amount, just wrap the packet tight and store in a dry cool place.
Always have plain water available too.

She still seems normal so far, although she seems a bit more nervous than usual. Should I keep her in the crate at night in the coop still?
 
She's likely antsy to rejoin her pals. Let her back with them, but keep an eye on her. If the seizures recur, give more Save-a-Chick. If this was just a matter of chemical imbalance, it won't be a continuing issue. But if her brain chemistry is off, she may require these electrolytes each time it happens. Then it would be more of a control issue than trying for a cure.
 
So she is still doing okay, I believe it is something wrong with her that I won’t be able to fix but only manage. She will be fine and then one day just start being shaky not seizures that I’ve seen at least but shaky. Is there something quicker I could do when this happens instead of separating her in order for her to drink the water? Like giving her nutri-drench?

Sometimes chickens can suffer from problems with vitamin B uptake as a congenital condition causing vitamin deficiencies that can also lead to seizures, staggering and disturbance of equilibrium.
