We are now well into December in the UK and our four hens are laying more regular than when they started in the summer... Theyve all been laying every day since the temperature dropped and the nights drew in. Not that I'm complaining, but it seems a bit backwards from what I've read?

Not if they are first year layers. Enjoy the eggs. Next winter will be different.
I've seen 3 eggs in over a month. I'm craving some fresh eggs!
Ok. I'm guessing they'll be due a moult towards the end of next summer. So I can't imagine they'll be so keen then.

Yep and Nope.
Is why I always hatch a fresh batch of pullets every spring,
and even that is no guarantee.

All of mine just laid over winter. I have 1 in her 3rd season laying now, 1 in 2nd year, and 3 in first year. None of them have stopped for winter or to moult. One stopped to go broody - but that's about it in the last 12 months since I owned them.
