Hey Grandpa, What's for Supper? Part 2

@Blooie and @pennyJo1960 flour is the missing ingredient. Not sure how I completely left the word. Oops.
Also, for more specifics, I used 3 onions (the typical small ones in the netted bags at the grocer) and about 2-3 lb of potatoes. Also the 1 egg was a duck egg, so think extra large egg or just add two smaller ones.

Be sure you ring out as much water from the grated potatoes and onions as you can. And when putting them in the oil, make sure each ball is packed firmly or the balls will just fall apart. Tossing in some more four or even instant potato flakes would help prevent that possibly because there would be more starch to bind it all.
Anyhow, they were great and I will make them again for sure. Glad you are interested in making them too.

My love of cooking really shined today. Plenty of praise from DW a she are servings.

I made homemade ravioli stuffed with a savory butternut and onion filling. The ravioli where tossed in browned butter with a bit of oil and plenty of herbs (dry parsley and Italian seasoning) and garlic. For a protien, I fried pork stakes in the griddle with the same herbs.

Delicious meal that would have cost $25 each at restaurant. Only thing missing was some white wine - unfortunately I don't buy white wine much because I prefer red usually.

Of course the kids didn't like the ravioli. Children's palettes just are not ready for that. Nuggets, pizza and ketchup are their primary food groups afterall. LOL. I was hoping DS (5yo) would because he really liked the butternut and onion filling when I let him sample it on a spoon. I think the addition of browned butter and herbs put him off. DD (2yo)want going to eat it from the get go I'm sure.

Rice Krispies. Gourmet Rice Krispies - with a banana sliced into it. Plain truth is, I was so busy cooking all day I forgot to make supper.

Didn't get to my pasta today, either. But I did get some of Miss Brenda Gantt’s biscuits made and froze half of them for biscuits and gravy on cold mornings. Then I made a gallon of chicken broth and while that was cooking I made 2 loaves of bread. After 8 hours of smelling that delicious chicken broth, I thought I’d be starving when suppertime rolled around. Nope. Ken wasn’t that hungry either. So I got my broth bagged (fifteen 1 and 2 cup bags worth), cooled and into the freezer, and shredded the meat that came off the chicken. By the time it simmers for 8 hours, most of the flavor and moisture is long gone from the meat, but it still works in soups, chicken salads, and when finely chopped and mixed with some Pecorino Romano cheese, spinach, ricotta, and an egg, it makes a nice filling for ravioli. so the shredded chicken got bagged into 1 cup portions and frozen as well. Then I got out my ingredients for supper so we could have our cereal.

I’m pooped!!
