Also, for more specifics, I used 3 onions (the typical small ones in the netted bags at the grocer) and about 2-3 lb of potatoes. Also the 1 egg was a duck egg, so think extra large egg or just add two smaller ones.
Be sure you ring out as much water from the grated potatoes and onions as you can. And when putting them in the oil, make sure each ball is packed firmly or the balls will just fall apart. Tossing in some more four or even instant potato flakes would help prevent that possibly because there would be more starch to bind it all.
Anyhow, they were great and I will make them again for sure. Glad you are interested in making them too.

Didn't get to my pasta today, either. But I did get some of Miss Brenda Gantt’s biscuits made and froze half of them for biscuits and gravy on cold mornings. Then I made a gallon of chicken broth and while that was cooking I made 2 loaves of bread. After 8 hours of smelling that delicious chicken broth, I thought I’d be starving when suppertime rolled around. Nope. Ken wasn’t that hungry either. So I got my broth bagged (fifteen 1 and 2 cup bags worth), cooled and into the freezer, and shredded the meat that came off the chicken. By the time it simmers for 8 hours, most of the flavor and moisture is long gone from the meat, but it still works in soups, chicken salads, and when finely chopped and mixed with some Pecorino Romano cheese, spinach, ricotta, and an egg, it makes a nice filling for ravioli. so the shredded chicken got bagged into 1 cup portions and frozen as well. Then I got out my ingredients for supper so we could have our cereal.
