Hey Grandpa, What's for Supper? Part 2

Beets, parsnips, taters, onions, carrots, and celery all cut into big chunks, tossed in olive oil and seasoned with Mrs. Dash and 2 cloves of finely minced garlic. Roast in a hot oven until deeply caramelized! Sometimes this kidney diet ain’t all that bad!
 
The enchiladas on Saturday turned out good. Ended up cooking to pans off them so eating the leftovers for lunch now.

Yestersay we are out with my sister and her family at Texas Road House. It was uncomfortably packed. Every table was full. Since we had a group of 8 we were lucky to get put into a corner at last which gave us a little distance, but not much.

Tonight will be turkey thighs, or at least that is what I think DW pulled it and has in a bowl in the fridge.
