Hey Grandpa, What's for Supper? Part 2

Hash. Whenever we have pot roast, the treat for the next meal is hash, made up of the leftover veggies and chunks of the beef, with plenty of sliced onion. I supplement the leftover taters and carrots with fresh that I’ve parboiled, dump it all in a big cast iron skillet with butter and olive oil, and toss it into a hot oven to fry. Kenny and Jenny will often buy a roast way bigger than they need just to be able to cook hash the next night. :drool
 
I did end up doing the Irish eggrolls. Everybody liked them except DS. My sister and BIL came over and liked them too. God thing they were here because my sister rolled most of the eggrolls, saving me from doing it.
I served then with rice as I originally planned to make for a side.
