Hey Grandpa, What's for Supper? Part 2

Tonight's dinner was a super simple affair. I had a baked sweet potato with butter and SO made himself a sandwich using left over sausages. My desert was honey roasted peanuts, his: a piece of coffee cake FIL had dropped off earlier in the day.
Tomorrow we'll have to make a real meal.

I see that FIL is still up to his dessert pushing ways, FarmerDenise!

Had Yesterday: Grilled Brats sandwiches and tropical fruit salad (pineapple, mandarin oranges, bananas, blueberries).

Planned for Today: Angel hair pasta with homemade pesto topped with grilled chicken; steamed mixed squash, fresh bread.

All this talk of Brats and sausage is making me crave it!

We had FFY night last night! (Fend For Yourself!) We had a busy day and got home around 7. DH had left over spaghetti, DS had a cheese quesadilla and I had yogurt and fried eggs. (imagine that!)

Tonight is Mexican night (Taco Tuesday ) So far the plan is just plain old soft shell tacos. I could get a little more creative, we shall see!!!!

I have not REALLY cooked in quite a while, but last night we had pueblo burgers- hamburger with onions, garlic and chili powder and corn(I didn't have any more though), on fry bread with lettuce, tomatoes, olives, and cheese. I make another version of this called Navajo tacos that you make chili beans to go on them also. Unfortunately, I forgot to get sour cream at the store and had no avocados either. Tonight I am throwing a tri-tip that was leftover from my mom's memorial in the crockpot with cr. shroom soup and will serve it over rice with gr. beans. Homemade choc. cupcakes with fudge frosting and homemade vanilla ice cream with heathbars in it for dessert!

Im fixin chicken & dumplins with one of our roos we processed this past saturday. I have him cooking in the crock pot right now. I guess mashed potatoes and green beans boy my sugar levels are going to be through the roof tonight.

Hello. It's been busy around here so not much cooking.
Saturday, it was chilly and rainy - chili hit the spot. DH got a new grill and we smoked hot dogs Sunday.
Last night was fend for yourself here, too. DH had leftover hot dogs, DD had the last bowl of chili and I had an English muffin.

I'm not feeling real well today so I'm not into cooking, but I have a round steak in the crock pot. I'll fix mashed potatoes and a veggie. That should do as we are taking our grandsons for ice cream tonight. They are leaving for a 10 day vacation early Thursday morning. We'll sure miss them.

Take care

Prairie Girl I hope you are feeling better soon.

Ice cream should make you feel better! Have a fun time with your Grandson.

Chicken and Dumplings sound fantastic. I did that months ago. Must be time again.

Cknmom your Pueblo Burgers and Navajo tacos gave me some new ideas for my "Taco Tuesday" menu. Thanks

I decided to bake a yellow cake today with chocolate chip fudge frosting. No real reason just that we have all been craving cake lately!

I have some cubed up pork from a couple of badly cut pork steaks I bought. To salvage the the meat I had to cut it up. SO...... My dilemma is what to do with it. Does anyone have an ideas? Usually I would do Sweet and Sour Pork. However i am out of pineapple and going to the store is not an option.

I would love to hear your ideas. I could grind it up as well.

This would be for another night. Either of these are good.

Toss the meat in the crockpot and season it with one of the following:

1. Carnitas -
Salt, Garlic, and salsa verde (in a can) and serve in tortillas with diced onions, cilantro, etc.

Or:

2. Kahlua (Kalua?) Pork -
Salt and some liquid smoke. Serve with whatever you'd want to have with it. Rice is traditional, but scalloped potatoes are also good.

Cook on high and shred.

thechickenchick, how about sauteeing that pork with garlic in hot oil til browned, then adding a mess of onions and peppers, cook til done and server with potatoes, rice or noodles. You might add some kind of seasoning that your family is fond of. I would consider poultry seasoning, taco seasoning or something like that.
Backyard Buddies yup, FIL is still pushing that desert. At least this time it was a decent quality! Usually we get the massive Costco package with one muffin missing

Don't know what we're doing for dinner yet. I just don't feel like cooking and I don't think SO does either.

Probably doesn't help that I just went to the store for coffee and perused the cheese counter, sampling. The kind people at the counter even offered me more samples as we discussed the availability of specialty cheeses. I spent $10.00 more than I had intended, because I bought some of that fine cheese.

I was hungry when we were out so we went to Cracker Barrel. DH had their new Campfire Beef. Beef, potatoes, corn on the cob, onions, carrots & tomatoes wrapped in foil and slow cooked. Thought he was gonna stick a young man that walked close to our table with a fork to keep him away from his plate.

Guess what we are having for dinner tomorrow???? Except I'm using a pork roast.
